Six Tips For Keeping Eggs Fresh For Longer

Chicken keepers are up to their ears in eggs during the summer. Eggs are few and far between in winter, so plan ahead by freezing eggs, which can be stored for up to one year. There is a proper way to prepare your eggs for freezing. Don’t just stick them in the freezer! The shell will crack and you will be risking bacterial contamination. Plus they won’t thaw quite right.

  1. Prepare ice cube trays by spraying with cooking spray. Silicon molds are a little easier to use.
  2. Separate egg whites and yolks. Keep eggs individual.
  3. Put egg whites in to ice cube trays and freeze. (One egg white per mold)
  4. Lightly whisk the yolks.
    • If using yolks for sweet recipes, add a pinch of sugar.
    • If using yolks for savory dishes, add a pinch of salt.
  5. Put egg yolks into ice cube trays and freeze. One egg yolk per mold
  6. Once frozen, the cubes can be removed from trays and placed in to a freezer bag. You may want to label your yolks sweet or savory.

When you are ready to use them, thaw them overnight. Egg whites will beat to better volume if you allow them to rest at room temperature for 30 minutes before use.
